Wall Quote- The One Month Project

I don’t know what I was thinking when I started to do this one. I had a very large wall that I really wanted a wall quote on. I searched far and wide for ideas, you see many pictures of wall quote on tumblr cut out of magazines, I have tons of magazines, but magazine pages are thin, and I just didn’t like the idea of searching for good pages, and all the unwanted colors that come with it.

I found my quote, and I think I picked the longest quote in the world, but it was something that I would like to see every day when I woke up. It’s all about the inspiration. I thought about what I would use on it for a long time. I decided to find a pack of scrapbook paper. I went to two Michael’s and finally found “the one.” Black and White floral, paisley, stripes, all that good stuff you would want in a paper pack.

I also got it 50 % because the paper packs were on sale but I printed the weekly coupon just in case. Michael’s weekly coupons are where its at.

So I counted all the letters that this quote had, 27 E’s. 27 E’s SO you can imagine how many more letters there were.

I cut each paper in sections of four. Using my dad’s Paper Chopper.

Then I went and found font that I really liked and in the size I wanted and printed that and used that as templates for the letters. Then I painstakingly cut out EVERY. SINGLE. LETTER. it took me two days. I then arranged them all over my living room floor, so I could measure how wide and tall it was across. This was a very very exhausting task, I dont really recommend this project to anyone. Well I do, if you use a smaller quote.

I began putting this project on my wall yesterday, as my best friend kelsey sat on my bed and kept my company, we watched Dan in Real Life and the Nanny Diaries, before I even finished half. She also laughed when I chose to use a old  rocking antique chair as a ladder       ( few close calls there). I used sticky tack to apply the letters. I measured where I wanted it on the wall, about three inches down. I didn’t measure the rest of the lines after that because that is exhausting.

Today, my friend Erik came over and clicked a few pics of me mid project.

We watched Will and Grace our favorite show as I finished it up. I am very happy with it, its kind of hard to read, but I kind of like it like that. And its a good reminder to wake up to every morning. I also decided to move the pink lantern I have had hanging from attic since high school. My best friend gave it to me for Valentines day. This was way back in the day before we could drive, and I remember this because my mom took us to Walmart and we snuck around the store and bought presents for each other, and gave them to each other right after. I think I will hang it in my closet. But I love that little thing, so I cant bear to get rid of it.

The finished product. Success!!

Fun day with Science

….said no one…ever. UNLESS. You have been to the Boston Science Museum. Then a fun day with Science is almost guaranteed. Heres how the story starts- Lindsey surfing the web late at night instead of reading, like I should be doing- on the Library website to renew the book for the second time that I have finished the other two times, because I have been spending too much time on the computer… anyways, found out you could get the library passes ONLINE. great. I also got the discount library passes to different places with the kids, but never for myself. Why not try for one? Whats the harm? So I tried for the day pass to Boston Science Museum. and… I got it! So exciting!

Everyone should check their local library every so often, not enough people do and it is literally such a great resource for everything. They have so many free events all the time for children and adults, on my library website you can download free music! Rent movies, rent CDs and then upload them to your itunes, and never pay for music again. I mean cmon people lets rediscover the magic of libraries. like Matilda did, and look she turned out to have super power. So it cant hurt to try.

Our admission was reduced to seven dollars for each person for up too four people, for a family, that can save you a BUTT load of money. When I used the library pass for me and my three kids, we went with another family only two kids one adult, and they payed double what we payed. P.S. my library even has a free beach pass… who knew?

So I grabbed my partner in crime. My fellow sort of unemployed cousin- we both have schedules right now with usually unset hours. She drove to boston because she just bought new car, and off we went. The Museum was surpassingly easy to get to right off the exit. When we got to the Museum it was DEAD. It was wonderful!! September a great month to visit because there were NO field trips going on, and since it was a thursday children were in school. I am really enjoying the freedom of it all. I only work MWF’s, so that leaves me with Tuesdays and Thursdays, since my days are limited, I am trying to live up every day.

Now I have not been to this museum since second grade so I was really excited to go. I have very fond memories of this field trip with my beloved second grade teacher. In the lobby the stair case is a PIANO.! YOu go up and down the stairs and each stair is a different key. For 22 year olds we spent far too much time on the stair case, I was just trying to play mary had a little lamb, but decided it was impossible after ten minutes of exhaustive running up and down, splits and skipping stairs.

Before we went into the actual Museum, we decided to have lunch at the Museum Cafe. The Cafe has so many options to pick from I could not believe it. Complete with Salad Bar! So this paleo/ cave woman was happy. The view was incredible from the dining area, right on the Charles River, with a great view of Boston’s sky scrapers. There is something about fall in the city that I love. I think its because it is the perfect temperature for city walking, and the foliage is beautiful and boston is just such a green city were there are many trees to appreciate the seasons and weather. I clicked a pic of our view, can you see the paddle boarder?

The first room we went into was all models. What I loved about this Museum is yes, it was kid friendly, but also made for adults, the challenges they had, were difficult and it took me a while to get most of them, mostly because I wouldn’t read through directions. But I mean I learned about nanotechnology and how they are going to use it to cure cancer, (hopefully because cancer sucks). We had a lot of fun solving the different challenges, such as making sure disease didnt spread to my fish I was breeding, guessing items, diagnosing patients with cancer using CT scans, x rays, stopping the spread of cancer, lifting 500 pounds, guessing scents ( my favorite and expertise, my friends call me a blood hound) categorizing shells, and sneaking through the forest to hid from birds.

We stumbled upon this electricity room which was was happening to just start a show as we walked in. This show emitted electricity to music, it was so strange yet so cool, like purple lightening bolts making music. Sarah volunteered, and the man rubbed a balloon on her head and made static electricity. Her hair shot right up. It was also funny because she was broadcasted on huge T.V.s either side. I could not stop laughing and clicking pics of her. Here are a few:

After that, we found a HURRICANE machine, you know the kind you see in the mall, which I thought we would for sure have to pay extra for, but NO! So awesome, it reached up to 78 miles per hour winds, not something I would wanted to experience in real life but simulated it was awesome. We laughed and laughed.

I think the thing I was most amazed about was the Dinosaur bones. Like they found an ENTIRE dinosaur bones in the earth, and I was standing next to it. I just couldn’t fathom how old the bones were, and how cool it was to like see a Dinosaur  up close, Can’t be real that those creatures actually used to roam the planet. Blows my mind! They also had a metal structure of a Dinosaur  that since nobody was around, I decided to climb into, it made me feel pretty cool. hahahaha. I am so happy however Dinosaurs are extinct, and I am not a prey for dinosaur. Just their feet are HUGE!

We wrapped up the day, and headed to Boston College! Our mutual friend is attending BC  graduate program for nursing, and she is also an RA with a nice room! It was weird being on a college campus again, its always an adjustment  and watching her and her room mate do homework made me realize how much i DON’T miss the stress of college, and homework, my life just has so much freedom now I am really learning how to enjoy every moment of it. We watched the Premiere of Grey’s Anatomy. Seriously. NINE seasons Grey’s has been doing this to me. NINE. It was such an emotional episode, and I definitely do not agree with what has happened to a lot of the characters.

Being a tourist in our own state was a great time. I think it is very important to travel, even if its only 20, 3o miles away. As I grow older I am finding more things located around me that I had no idea existed. I am taking this time that I was given and trying to enjoy every moment of it, while getting projects done, traveling, and spending time with family.

Steak Asparagus Wrap

So I saw a picture of this online and just tried to re create it myself. I went to Stop and Shop and looked for thinly cut meat, which was only like 2.63 for five pieces, which completely blew my mind, what a great cut of meat of a college budget, I also picked up a bundle of asparagus, not as cheap.

Used my skillet with coconut oil of course, and spiced the meat with random spices I found in my cupboard, I think Slap Ya Mama, and blackened spices.  I also added chopped onions for the aroma and taste. Meanwhile I coated the asparagus lightly with olive oil and salt and baked them in the oven on a tin foil covered cookie sheet for about 20 minutes.

When the steak was done I took three or four asparagus, and wrapped them with steak, holding them in place with tooth picks.

The steak was not as flexible as I was hoping, and it didn’t cover much of the asparagus. Next time I will look for a little bit different cut of meat, it tasted good, and it was fit my Paleo Diet, so I was happy. My mom liked it too.

I will call this one a half way Success.

Small steps to Organization

WHAT TO DO WITH ALL THOSE SPICES IN MY CABINET. I have been cooking a lot because of Paleo Lifestyle. Requires cooking every meal. The crazy mess of spices in the cabinet was driving me NUTS.

I wish I took a before picture, but it was very hard to find the spice you needed when they were all shoved into one shelf, and looked the same.

Solution:

I went to Walmart, (checked target but they had nothing) and picked up drawer organizers. For cheap, they came in three packs. At target I got neon dot stickers. I just wish they came with more colors!

Took all the spices out and wrote what they were on the TOP lid. why don’t companies do that already? I then organized them into groups of five. I took the color dots and put them on the bottom of the spice, that way we know where to put them back!

I placed all the groups into their own organizer, which was color coded.

Then made a list on the side of the cup board of what every spice. With the color sticker next to it so you could find it!

Successful Organization

Update: My cupboards have been jam packed as long as I Can remember. We have very old tupperware and a million other things in our cupboards that we don’t use anymore. Time to organize.  Heres the before of one of the cabinets I did:

The biggest problem was finding proper lids to the proper tupperware. We have multiples of many things but I decided to only keep what we had enough lids to. So we had about 8 bowls, but only 4 lids, I took out the other four bowls. Same with mason jars. There was tupperware in there I never knew we had. Another problem was my mom was using large tupperware to store smaller tupperware, so there was no point in owning the large tupperware because it was stuffed with smaller, and no one was going to empty it to use it. So this had to change as well. Again, heading to Walmart and using the cheap small organization bins they have can make a world of a difference. I also just got rid of any tupperware that was warped, if its to hard to put on the lid, I am not going to use and neither is anyone else. The after:

I also emptied out the lazy susan, and two other cup boards, there were so many things in there we didn’t realize that we didn’t need. Such as christmas mugs, candles, servers, presents my parents received from their wedding. Silver bowls, silver servers, Air popper popcorns, old coffee machines, Things that you over look everyday because they are covered with other things. We made a huge pile to donate. Now I have a great understanding of what we actually have in my kitchen and now I can USE that stuff in the future!! It is exciting, because some of the tupperware things will be really handy. Such as the pickle container hahaha.

Quote of the day: You never know what you have…until you clean your house.

THE TASTIEST Bar you could take to a party- Pick Up Bars- Ooiee Gooey Marshmallow Caramel

I got this Recipe from the Domestic Rebel

I had left over caramel sauce from my White Trash Cake . When this came up on my reader, I thought it would be the perfect way use up the rest of the carmel sauce so I didn’t have to watch my brother dip his entire apple and let it run down his chin anymore.

These bars WERE. SO. DELISH. Just the right kind of consistency, it tasted so wonderful. So Goo-ey melt in your mouth. I HIGHLY recommend these. These will be accompanying me to every party I attend that requires bringing food. I mean this one is REALLY up there.

I also had a very interesting day, these bars will always remind me of this day. It was rainy, so I decided to sit and read, and blog, but of course my day was taken over by blogging, then I decided I needed to go to Target, to pick supplies, to bake things, to blog, obviously. First of all I was food shopping in Target-even though I rarely do this because in Stop and Shop I know where everything is, they have everything I need, I use the easy shopper and get gas points. But I didn’t feel like making the two minute drive to stop and shop becuase I was already in Target. So while looking for my ingredients and cringing every time I looked at the price, I kept running into this STUPID COUPLE. They were standing in the baking aisle, basically making out. This means I couldn’t get to the cake mixes, or the chocolate chips, or anything I needed to make these bars, I stood there, waited, and I couldn’t TAKE IT ANYMORE. In between the disgusting kissing, the girl was like “what do you need to make cookies?”. I almost slapped her. She picked up a Cookie Mix. Then they were with me in the butter isle, geting a small butter, and then eggs, only picking six eggs. In my way in every aisle. Going home so they could “bake” cookies together. They DROVE ME NUTS, First of all PEOPLE. thats not baking, baking ur dumb cookie mix and thinking your so cute baking your little cookies together and being a couple. Who doesn’t already have eggs and butter?

On the drive home my car just stopped working. just stopped, in the middle of a road/ intersection happened to be on my street. My brother and my dad were both out of town which left me basically stranded. My uncle joe, who is my neighbor came to save me. Luckily there is still nice people in the world. Which is always a wonderful reminder and makes me want to help others when someone helps you! I was not stopped for one minute before a nice man pulled over and said he would really like to help me be pushed out of the street. He was young and cute. maybe my soul mate. probably not. Then another women stopped and asked if I needed help but my Uncle Joe was on his way, and he got there in like 2.2 seconds

Did I mention it was raining? So we decided the car was dead. He drove me home and I promptly baked these bars. Even though this whole thing really didn’t put me in a bad mood at all. I decided yesterday that I was going to sell my car before I went and worked on the cruise, and someone already wanted to buy it. So it was only fitting that it broke down. Now its the age old question- fix it, or scrap it. Who knows. But this dessert is seriously a great pick me up. So I am going to call them Pick up bars, they can pick up and funk you find yourself in. The bar made of cake mix was so awesome. So much better than a blondie brownie, they were nice and moist.

Heres the recipe:

1 box yellow cake mix
2 eggs
1/2 cup butter
1/4 cup brown sugar
1 bag miniature marshmallows- I only used half the bag
1 & 1/2 cups butterscotch chips
About 1/2 cup caramel sundae sauce

Very simple, Mix cake mix eggs butter sugar in a bowl. Place in 9×13 greased pan. Bake at 350 for 18 minutes, until golden brown and just starting to harden in the middle.

Take out and pour butterscotch chips and marshmallows over the whole thing and place back into the oven for five minutes or until marshmallows are puffy. I did this, and then put my broil on high and toasted the top of the marshmallows and I was so proud of the golden brown toast I got on them. Usually when toasting marshmallows, which is always the final step in any recipe, I burn them, and then all the hard work on the recipe before it is RUINED.

After its cooled Drizzle on the caramel sauce. DELISH. I can’t get enough. EVERYBODY needs to try before they die.

Apple Cider Party Punch

I looked far and wide for a decent punch recipe for my Nail Party, I finally found one, I once again remember how to make it but cant find the actual recipe I actually used.

Here are the ingredients

  • Six Cups of Apple Cider
  • 2 Cups of Orange Juice
  • One bottle of sparkling grape juice ( you could use sparkling wine) 750 ML
  • 1/2 cup of Lemon Juice

To save money I bought the frozen orange juice concentrate and used that instead. Also one gallon of cider works, ( for those who can’t convert cups- gallons-pints-ounces like me).

Pretty simple add all the ingredients together and you got your self a FALL CIDER PUNCH!

I didn’t get a picture of this I apologize, but it looks like punch.

Fall Party

So if you keep updated- you’ve realized I was having a Jam-berry Nails Party ( if you dont know what those are google them, they are super fun and easy to apply way better than actually painting your nails).

I made almost All fall desserts and really wanted them to look nice on the table. The party was on September 21st, the last official day of summer so I figured a fall themed party would be a nice way to welcome fall the right way. It was easy to decorate for the party because my mother LOVES leaves, and you know when someone loves something people but them a surplus of that item. So we have lots of leaves dishes. I bought two dishes from the target dollar Aisle. (thanks target once again, helping my unhealthy obsession). I also bought fake leaves there too for a dollar. Can’t forget the fall paper ware, it was modern not like the tacky leaves kind. Also one dollar. Headed over to Walmart (eww) and got an apple cider candle. My mom also had a pretty fake fall bouquet, so everything was falling into place nicely. Stop and shop had a pretty gold leaf charger I picked up for three bucks.

My baby cousins help me set up the party, and it came out so cute, I threw the candle into a vase, which made it look elegant, and arranged the leaves around the table. I had just bought a paper pack from Michael’s using 50 % off coupon. For those who don’t know EVERY week Michael’s has either 40 % or 50 % coupon for any regular priced item. You can print it weekly, and its just AWESOME! I used the paper pack to quickly make little labels for all my crazy desserts, because people ask all night “what is this?”.

Here is the lay out of all my wonderful food- with the pictures and links to the recipes!

Stuffed Cinnamon Buns

Apple Stuffed Cinnamon Buns

This idea came to me when I was shopping for Crescent Rolls for my apples in a blanket Recipe: Find here:

Apples in a Blanket

I saw the packaged cinnamon buns- and I thought WHY NOT? Isn’t that basically what I am doing anyways? Stuffing the rolls with apples and then rolling it cinnamon and sugar, why not buy that pre made?

So I bought the cinnamon buns. I thought how should I do this: so this is what I did.

Took the roll and cut it in half- with a very sharp knife. However I didn’t go all the way through the middle I left it like a sandwich rolls.

Stuffed it with a few apples from the apple pie filling in a can.

Closed them back up and baked them by following the package.

When they came out of the oven I frosted them with the frosting it came with. Delectable.

They were wondrous! I was so proud of myself for coming up with this. A great home made twist- on something already made for you. STUPID EASY.

Pumpkin Rice Krispie’s

So I found these somewhere; and of course now I can’t find the recipe. But I can remember- sorry I can’t give proper credit.

3 Tablespoons of butter

One bag of Mini Marshmallows plus one cup

1/4 of Pumpkin Puree

Dash of Nutmeg

Dash of All spice

1/4 Tsp of Cinnamon

6 cups of the snap crackle pop cereal ( Rice Krispie’s)

SO This was another treat I wanted to add to my fall party dessert lay out. I had most of the ingredients so its what I picked!

What you do is you melt the butter over the stove on low-medium. Add in the pumpkin as soon as its done, and throw in the spices. Add the entire bag of Mini Marshmallows and stir until those are melted. Take off heat. Then you have to wait 10 minutes to add in the extra cup of marshmallows. Once that cup is added WAIT longer. About half n hour. Then you can go ahead and add in the Kripies. They say that if you dont do this the treats will become soggy. So I didn’t mess around with it.

Pour into any size pan, depends on if you want tall treats or not I opted for the 9X13. Let it set for half n hour and then cut and serve! Simple! No bake! OHH YEAH

I didn’t try these because I am not a fan of rice krispie treats. weird I know. but I heard they were excellent!

Pumpkin Pie DIP

Im a sucker for dips. So here it goes:

Recipe for Pumpkin Pie Dip:

  • One box of Vanilla Pudding Mix
  • One tub of Cool Whip
  • Can of Puree pumpkin
  • Pumpkin Pie Spice

I bought the ingredients on monday for the party on friday, and decided to mix the ingredients early, that way it REALLY had a chance to soak up the flavors, you know dips are always better when you let the sit for a while.

The recipe called for pumpkin pie spice, but why waste the money for pumpkin pie spice, when you have a full spice cabinet? Heres how I made my pumpkin spice:

Pumpkin Pie Spice

  • Cinnamon
  • ginger
  • Nutmeg
  • All spice

I guessed on mine, and just added a little bit of everything, but if you’d like one to store in your cabinet heres the measurements:

  • 3 tablespoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons nutmeg
  • 1 ½ teaspoons ground allspice
  • 1 ½ teaspoons ground cloves

So I mixed one box of vanilla pudding, and my home made pumpkin pie spice and added it to a tub of cool whip. I placed the cool whip back in the freezer for the week- to be used later when I needed it.

I grabbed a pumpkin and hallowed it out, (kept and cooked the seeds yummy paleo snack).

Thawed out the frozen previously made cool whip and added the can of pureed pumpkin. I threw it all in the hallowed out pumpkin and looked super cute!

This dip was super easy to make and I enjoyed it because it didn’t have cream cheese, or sour cream or too many ingredients like other dips call for. It was just a nice light pumpkin dip and everyone really enjoyed it!
