Funfetti Goey Bars

My boyfriend loves all things funfetti and cake batter so I made these for valentines dinner in a heart shaped pan and he couldn’t get enough of them! Thank you! 

INGREDIENTS:

  • 1 yellow cake mix
  • 1 stick (1/2 cup) butter, softened
  • 1 egg
  • 2/3 cup sprinkles, divided
  • 1/2 cup (from a 14 ounce can) sweetened condensed milk
  • 1 cup white chocolate chips

DIRECTIONS:

  1. Preheat oven to 350 degrees. Line a 9×9” pan with foil and spray liberally with cooking spray.
  2. Add cake mix, butter, and egg to the bowl of an electric mixer fitted with a paddle attachment. Mix until a thick dough forms. Add 1/3 cup sprinkles and stir until incorporated.
  3. Press about 2/3 of the dough into the bottom of the prepared pan. Sprinkle with white chocolate chips and remaining 1/3 cup sprinkles. Pour sweetened condensed milk over the top. Separate remaining dough into small balls and evenly space over the top of the bars. Press down to flatten.
  4. Bake bars for about 30 minutes, or until they just begin to brown. Cool completely before slicing, otherwise the mixture will be too gooey to cut.

Baked Hummus Spinach Dip

Here is a recipe I got from Lo Bosworth. Were BFFLs!!! jk I wish, I just follow her on instagram. This recipe is great because its a healthy alternative to other dips and it kind of tastes like some sort of artichoke dip.

Ingredients:

  • 7 oz container of Sabra Hummus ( I used garlic because I love garlic)
  • 2 cups of fresh spinach
  • 3/4 cups plain yogurt
  • 2 Garlic cloves
  • 1 egg
  • salt and pepper
  • olive oil
  • Stacy’s Pita Chips ( I used triscuits)

Process:

  1. Put Spinach and garlic n food processor and pulse until garlic has been diced and spinach is small.
  2. Mix together yogurt and egg in a bowl.
  3. Combine all ingredients, and place into oven safe dish.
  4. Drizzle top with olive oil.
  5. Bake at 375 for 25 minutes

I over baked mine because I thought I would see some sort of bubble or browning, neither one happen! So definitely keep it in for 25 minutes and trust that it is ready :)

This recipe makes me happy. and I eat it like three times a day.

Wake up in the morning, grab ya coffee mug, and mash a banana in it. I use a fork. Then crack an egg open and throw it in, and mix it all together. I leave a little bit of chunky banana. Then you put in the microwave for three minutes. It’s going to look like its going to over flow but in my experience it doesn’t, it rises by minute two, and goes down gradually through minute three.

Others have added blueberry, or unsweetened coconut. But I just east it plain!

It nice and hot and almost feels like your eating oatmeal, or hot banana bread if you added walnuts.
