Its been a while since a recipe has disappointed me, so I guess it was time. This is advertised as a ” Moist Banana Bread” and in search of the perfect Banana Bread I figured I would try it. I followed the recipe exactly so I am not sure what happened, It tasted alright but was not moist.
1/2 cup butter, softened
1 cup sugar
1/2 cup mashed ripe banana
1/3 cup drained crushed pineapple
1/2 cup flaked coconut
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
In a bowl, cream butter and sugar. Beat in eggs. Stir in banana, pineapple and coconut. Combine dry ingredients; stir into creamed mixture just until combined. Spoon into a greased 8-in. x 4-in. loaf pan.
Bake at 350-f degrees for 65-70 minutes or until bread test done.
These bars are so good! and so tasty! Super moist cake that only gets more moist as days pass. So greasy although, and def not good for you!! Thanks Breadmans Wife!
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg *
1 teaspoon salt
1 teaspoon baking soda
1 and 2/3 cups sugar
1 cup oil
1 can (15oz) pumpkin (not pumpkin pie filling)
1 8oz. package of cream cheese
1/3 cup softened butter
4 cups powdered sugar
2 tsp pure vanilla extract
1 Tbsp milk
Sift dry ingredients (flour, baking powder, cinnamon, nutmeg, salt & soda) and set aside. In a large bowl, combine eggs, sugar, oil and pumpkin until light and fluffy. Add the dry ingredients, gradually. Mix well.
Spread batter in a greased 15x10x1 baking pan. Bake at 350 degrees for 25 – 30 minutes or until a toothpick inserted comes out clean. Cool completely.
Cream together butter and cream cheese until smooth and fluffy. Add powdered sugar, vanilla and milk. Mix on high speed until smooth creamy.
For Tuesday night dinner I was making a Portuguese themed meal. I absolutely LOVE Cajadas and asked my best friends Mom for the recipe. I couldn’t believe how simple it was!!
2 Cups of milk
2 cups of sugar
1 cup of Flour
3 Tablespoons of Margarine
Lemon Zest from 2 Lemons
Mix all ingredients together, pour into muffins tins and bake at 325 for 45 minutes.
They flour sets at bottom, making a crust, and eggs cook in the middle making a custard. Its magic. The Zest rises to the top and makes an excellent crunch topping.
The key here is you have to grease the pans REALLY well. My best friends mom gave me what’s called “cake release” from Wilton. You can buy at like a Michaels or A.C. Moore. Which you brush into muffin tins with pasty brush. The cajadas slip right out this way. They are SO good especially right out of the oven!!!
So this recipe really shouldn’t qualify as quiche since it only contains two eggs but its so tasty, I love it!! This recipe was given to my from my friend, and she got it from her aunt, so its been passed down the line which are the best kind of recipes!
One unbaked pie shell
1/2 cup of mayo ( I like miracle whip)
1/2 cup of milk
1/2 cup of shredded cheese (cheddar works nice my mom likes swiss)
1 tblspoon of cornstarch
Here is where you customize it! I liked to add 3/4 cup of ham, cubed, some onions, mushrooms, broccli. Recipe can take even green peppers or any veggies you like. I dont use more than 2/3 cups of veggies combined.
Mix wet ingredients, and gently stir in chunky things next.
Pour into pie shell and bake at 350 for 35-40 minutes. Until center comes out clean when poked with knife :)
