Pumpkin Rolls

I am trying to make a pumpkin treat once every weekend in october! Here is this weekends’: Thanks Girl who ate everything

Ingredients

    • 3 eggs
    • 1 cup white sugar
    • 2/3 cup pumpkin
    • 1 teaspoon lemon juice
    • ¾ cup flour
    • 2 teaspoons cinnamon
    • 1 teaspoon baking powder
    • ½ teaspoon salt
    • 1 teaspoon ginger
    • 1 teaspoon nutmeg
    • powdered sugar for sprinkling
Filling:
  • 1 (8 ounce) package cream cheese
  • ¼ cup butter, softened
  • 1 cup powdered sugar
  • ½ teaspoon vanilla
  1. Preheat oven to 350 degrees.
  2. In a large bowl, beat the eggs on high speed for 5 minutes. Slowly add the white sugar, pumpkin, and lemon juice and mix well. Add the flour, cinnamon, baking powder, salt, ginger, and nutmeg and mix until combined.
  3. Grease and flour cookie sheet. Pour batter into a rectangular shape (don’t fill the sheet), leaving space on the sides for the batter to expand while cooking. Bake for 15 minutes.
  4. Sprinkle ¼ cup powdered sugar on terrycloth towel.(I used papertowels)  I would put more just to ensure that your roll doesn’t stick to your cloth. Loosen roll with spatula and flip onto the towel. Gently roll with the towel rolled up inside it as well and let it cool in the fridge. This step is to get the pumpkin roll in the correct shape while cooling.
  5. While roll is cooling, prepare filling by mixing cream cheese, butter, powdered sugar, and vanilla in a medium bowl. When roll has cooled in the fridge, unroll it, remove the towel, and spread the filling evenly inside. Roll it back up and refrigerate. It’s really hard to not crack the dough when rolling but if it does don’t stress because the cracks fix themselves when it refrigerates. Also, slightly dampening the cloth helps. Refrigerate until ready to serve. Cut into 1 inch slices to serve.

I overcooked mine so it came out not perfect circular but tasted fantastic!!! Success!

End of my Whole30

Thirty days of Paleo, it was… rough.

I learned a lot about myself and my eating habits. I was miserable/cranky/irritable, and every other horrible personality trait you can think of. As you can read about here: Beginnings of Paleo.

By day 14 I lost count of what day I was on, eating Paleo became normal, and I no longer thought constantly about the foods I was “missing” out on.

I think my favorite part of the diet is not weighing yourself until the end, Helps not obsessing over weight and just feeling good. I have no goal weight because I just want to feel good in clothes, in life and feel most important HEALTHY. I decided step one is to not be ashamed of my weight and openly share it, and even to the world, via Senior2realworld. :) I felt the changes, I felt good. My jeans from last winter were so loose I could not wear them. Even some yoga pants were loose. At the end of the 30 days I am  unsure of how much weight I lost, because I didn’t weigh myself before. I can tell you: before I had my gallbladder surgery I was at 222. After my surgery and not eating for 14 days and at my lowest skinniest nastiest point of the recovery time I was at 198. I began to gain weight once I was eating again. (duh) and I got frustrated and stopped weighing myself after 212. This was well before Paleo. After Whole30, I weighed in at 206.5

The first introduction I had was Graham Central Station Ice cream. To reintroduce sugar and dairy. I felt good. no stomach ache, Could not believe it. I had cheated (oops) through out the diet, very little, a bite of cookie here, food not cooked in coconut oil and I felt as though, I would die. My body rejected the idea of any of this, so I was surprised when I felt fine. I would also get extreme sugar headaches, my body was NO SUGAR. OWW. I had to go for a modified barium swallow and they made me eat graham crackers and honey nectar and fruit cups and I felt so gross after that I could barely shake it for the rest of the day.

Unfortunately the next day was my Cookies and Cocktails Party. Where I indulged in cookies and alcohol. Except I really didn’t have that many cookies because they made my tummy weird, and I really didn’t drink much of the cocktails. I had SEVERE acid reflux issues. Luckily my Dr. before I got off Paleo prescribed reflux medicine because food was traveling down my esophagus slower than normal.  I especially noticed this with carbs such as bread, cookies anything like that. But it was painful, un sure if I had this problem before and ignored it because I felt crappy all the time or if it is actually worse now.

I also BURP ALL THE TIME off the diet now. I am currently on vacation and traveling through various family members and I dont want to be that person a “diet” and difficult when it comes to meals because they are already nice enough to let me stay with them and cook for me! I am still making healthy choices when I can. (yesterday at the airport I picked a grilled chicken salad) over subway, the many chinese foods and sushi and mexican I really WANTED.

Once I return home from Vacation Paleo will begin again. But my own version of Paleo so it can become more manageable for me and a lifestyle.  For example, I am going to eat beans, and maybe the occasional piece of chocolate and dessert if its special occasion. I want to learn more about what triggers my  acid reflux!

Cookies and Cocktails

This was the name of my last event. Cookies and Cocktails. Here is the invite I sent out to everyone via FB:

So heres the deal, does anyone actually ever get to use all those recipes you PIN? NOW YA DO. This party idea came to me like a dream.

The concept is sort of based off of a Cookie Swap. Back in the day my family and I would make dozens of cookies and bring them for the family, We would all swap a dozen and come home with 8 do

zen cookies of what everyone else made. It was great fun.So why dont we try it out? on a much smaller scale. So the cookie swap will consist of everyone bringing 2 dozen cookies, this way you can swap a few cookies with everyone else this way your coming with a VARIETY of 2 dozen cookies. (if we dont eat them all at the party).SECOND PART: COCKTAILS. We’re getting older, time to explore more than just the sprite and flavored vodka. haha. There is a whole world out there of cocktails we have never tried. So find a cool cocktail recipe online make a pitcher of it, and bring it! If everyone brings a pitcher we will have a grand old time. Sipping and trying everyones concoctions!
I really wanted to make really great cookies and I thought long and hard about this decision. I decided on my classic Peppermint Cookies and also decided to take on Girl Scout Caramel Delights. Those cookies have quite a few steps but I had some time.
For the cocktail I knew it had to be blue, I love blue drinks. I found a variety of recipes online but decided to combine my own together.
I picked up a few little things at Michael’s because I wanted to make prizes. I got one dollar glitter crowns and used stickers I already had at home. I got a sugar cookie scented candle for the winner of best cookie, and then I soaked gummy bears in vodka. I thought it would be fun for people to have something to wear to show off their wins. haha.
I also was given flip flop drink charms because I used to be OBSESSED with flip flops. I got stickers and stuck everyones initials on the back of the drink charms with the help of Audrey and Amy. I then took the scrapbook paper I bought at Michaels and made name cards, to for each person who was coming. This way they could place their name on the cookies and cocktails they made so it would be easy when it came down to voting.
For voting I wrapped a box with wrapping paper and cut a hole in it for the ballot box, Cut scrapbook paper for the ballots. I made a list of the participants, and put it on a clipboard so I could easily tally when it came to the votes. When I throw a party I try to imagine everything that will be needed at the party so I dont spend the whole night running around for things. Example: a bucket of sweatshirts if I am having a party outside (someone always needs a sweatshirt). If I plan on playing games I have everything set. and ready to go. Just makes it more pleasant to be a party host!
My cookies I made were Caramel Delights and Peppermint Cookies. I was excited to see what everyone would bring. It was funny that it forced my non-baker friends to bake. One of my friends said ” I can’t believe you like to do this, it gives me so much anxiety” Other friends were very impressed with themselves that they were able to make something from scratch.

 My friend made so many different cookies. Like the non domestic Ash Pags who bought pre made cookies and filled them with frosting (caught ya). Brielle who frosted and decorated Oreos Halloween Style. Shannon who made the Pinterest S’more cookies. Ashcow some sort of sprinkly fudgey goodness. Toni, authentic Pizelli’s, because her mother owns a Pizelli iron. Erik had someone made tasty chocolate covered sugar cookies, and bertha cooked premade cooke dough (caught you too). Kels who made cup cookies peanut butter and chocolate chocolate, Sarah Andes Choco Mint Cookies, Ariana nutella cookies Morgan “dark and stormy” spice cookies with real rum in them and they WON best cookie. They were really tasty, and my personal fav just because I could see how much effort was put into them, Monika’s Pinata Cookie. These things were amazing, so I asked her to send me pics of them. They made noise when you shook them, I mean CMON and look a the color and THE BOWS! Bravo Monika, Bravo.
Cocktails were another great adventure. We called mine Slime, or Blue Lagoon, but we had so much of it, it was strong but tasty, and I froze the rest. It made a huge cocktail. Erik made some arnold palmer mix, that was delish. Ariana a cranberry margarita, Toni and winter sangria with cranberries and figs and other sautéed winter fruits. Ashcow made this delish Thin mint cookie martini that she mixed right there for us. IT was to DIE for. Bertha made apple cider and rum, ( I always love that) and Sarah made Love potion, which was vodka sherbert lemonade, it was yummy and won best cocktail! ( I think I am forgetting some).
I started my classic Cereal Box game, which is wear you have to pick up the cereal box with just your mouth, only having your feet on the ground, your arms, knees anything else can not touch. As the game progresses I cut the cereal box and make it shorter and harder.
Then we decided it was WAY to friggin hot in the basement so we moved out to the deck. A Deck party with Twinkle lights on October 5th, Can you believe it? I definitely did not mind.  Outside we played a humming game where I make team members stand far away from each other and when I scream go run and hum to their other team mate while the team mate tries to guess. It was hilarious.

Byt the next day I ended up with so many cookies-so many cocktails left over, and it was so fun to see all my college friends again, make people step out of their comfort zone and throw together. We had a blast hanging out on the deck and enjoying cocktails.

THE TASTIEST Bar you could take to a party- Pick Up Bars- Ooiee Gooey Marshmallow Caramel

I got this Recipe from the Domestic Rebel

I had left over caramel sauce from my White Trash Cake . When this came up on my reader, I thought it would be the perfect way use up the rest of the carmel sauce so I didn’t have to watch my brother dip his entire apple and let it run down his chin anymore.

These bars WERE. SO. DELISH. Just the right kind of consistency, it tasted so wonderful. So Goo-ey melt in your mouth. I HIGHLY recommend these. These will be accompanying me to every party I attend that requires bringing food. I mean this one is REALLY up there.

I also had a very interesting day, these bars will always remind me of this day. It was rainy, so I decided to sit and read, and blog, but of course my day was taken over by blogging, then I decided I needed to go to Target, to pick supplies, to bake things, to blog, obviously. First of all I was food shopping in Target-even though I rarely do this because in Stop and Shop I know where everything is, they have everything I need, I use the easy shopper and get gas points. But I didn’t feel like making the two minute drive to stop and shop becuase I was already in Target. So while looking for my ingredients and cringing every time I looked at the price, I kept running into this STUPID COUPLE. They were standing in the baking aisle, basically making out. This means I couldn’t get to the cake mixes, or the chocolate chips, or anything I needed to make these bars, I stood there, waited, and I couldn’t TAKE IT ANYMORE. In between the disgusting kissing, the girl was like “what do you need to make cookies?”. I almost slapped her. She picked up a Cookie Mix. Then they were with me in the butter isle, geting a small butter, and then eggs, only picking six eggs. In my way in every aisle. Going home so they could “bake” cookies together. They DROVE ME NUTS, First of all PEOPLE. thats not baking, baking ur dumb cookie mix and thinking your so cute baking your little cookies together and being a couple. Who doesn’t already have eggs and butter?

On the drive home my car just stopped working. just stopped, in the middle of a road/ intersection happened to be on my street. My brother and my dad were both out of town which left me basically stranded. My uncle joe, who is my neighbor came to save me. Luckily there is still nice people in the world. Which is always a wonderful reminder and makes me want to help others when someone helps you! I was not stopped for one minute before a nice man pulled over and said he would really like to help me be pushed out of the street. He was young and cute. maybe my soul mate. probably not. Then another women stopped and asked if I needed help but my Uncle Joe was on his way, and he got there in like 2.2 seconds

Did I mention it was raining? So we decided the car was dead. He drove me home and I promptly baked these bars. Even though this whole thing really didn’t put me in a bad mood at all. I decided yesterday that I was going to sell my car before I went and worked on the cruise, and someone already wanted to buy it. So it was only fitting that it broke down. Now its the age old question- fix it, or scrap it. Who knows. But this dessert is seriously a great pick me up. So I am going to call them Pick up bars, they can pick up and funk you find yourself in. The bar made of cake mix was so awesome. So much better than a blondie brownie, they were nice and moist.

Heres the recipe:

1 box yellow cake mix
2 eggs
1/2 cup butter
1/4 cup brown sugar
1 bag miniature marshmallows- I only used half the bag
1 & 1/2 cups butterscotch chips
About 1/2 cup caramel sundae sauce

Very simple, Mix cake mix eggs butter sugar in a bowl. Place in 9×13 greased pan. Bake at 350 for 18 minutes, until golden brown and just starting to harden in the middle.

Take out and pour butterscotch chips and marshmallows over the whole thing and place back into the oven for five minutes or until marshmallows are puffy. I did this, and then put my broil on high and toasted the top of the marshmallows and I was so proud of the golden brown toast I got on them. Usually when toasting marshmallows, which is always the final step in any recipe, I burn them, and then all the hard work on the recipe before it is RUINED.

After its cooled Drizzle on the caramel sauce. DELISH. I can’t get enough. EVERYBODY needs to try before they die.

Apple Cider Party Punch

I looked far and wide for a decent punch recipe for my Nail Party, I finally found one, I once again remember how to make it but cant find the actual recipe I actually used.

Here are the ingredients

  • Six Cups of Apple Cider
  • 2 Cups of Orange Juice
  • One bottle of sparkling grape juice ( you could use sparkling wine) 750 ML
  • 1/2 cup of Lemon Juice

To save money I bought the frozen orange juice concentrate and used that instead. Also one gallon of cider works, ( for those who can’t convert cups- gallons-pints-ounces like me).

Pretty simple add all the ingredients together and you got your self a FALL CIDER PUNCH!

Fall Party

So if you keep updated- you’ve realized I was having a Jam-berry Nails Party ( if you dont know what those are google them, they are super fun and easy to apply way better than actually painting your nails).

I made almost All fall desserts and really wanted them to look nice on the table. The party was on September 21st, the last official day of summer so I figured a fall themed party would be a nice way to welcome fall the right way. It was easy to decorate for the party because my mother LOVES leaves, and you know when someone loves something people but them a surplus of that item. So we have lots of leaves dishes. I bought two dishes from the target dollar Aisle. (thanks target once again, helping my unhealthy obsession). I also bought fake leaves there too for a dollar. Can’t forget the fall paper ware, it was modern not like the tacky leaves kind. Also one dollar. Headed over to Walmart (eww) and got an apple cider candle. My mom also had a pretty fake fall bouquet, so everything was falling into place nicely. Stop and shop had a pretty gold leaf charger I picked up for three bucks.

My baby cousins help me set up the party, and it came out so cute, I threw the candle into a vase, which made it look elegant, and arranged the leaves around the table. I had just bought a paper pack from Michael’s using 50 % off coupon. For those who don’t know EVERY week Michael’s has either 40 % or 50 % coupon for any regular priced item. You can print it weekly, and its just AWESOME! I used the paper pack to quickly make little labels for all my crazy desserts, because people ask all night “what is this?”.

Stuffed Cinnamon Buns

Apple Stuffed Cinnamon Buns

This idea came to me when I was shopping for Crescent Rolls for my apples in a blanket Recipe: Find here:

I saw the packaged cinnamon buns- and I thought WHY NOT? Isn’t that basically what I am doing anyways? Stuffing the rolls with apples and then rolling it cinnamon and sugar, why not buy that pre made?

So I bought the cinnamon buns. I thought how should I do this: so this is what I did.

Took the roll and cut it in half- with a very sharp knife. However I didn’t go all the way through the middle I left it like a sandwich rolls.

Stuffed it with a few apples from the apple pie filling in a can.

 

Closed them back up and baked them by following the package.

When they came out of the oven I frosted them with the frosting it came with. Delectable.

They were wondrous! I was so proud of myself for coming up with this. A great home made twist- on something already made for you. STUPID EASY.

Pumpkin Rice Krispie’s

So I found these somewhere; and of course now I can’t find the recipe. But I can remember- sorry I can’t give proper credit.

3 Tablespoons of butter

One bag of Mini Marshmallows plus one cup

1/4 of Pumpkin Puree

Dash of Nutmeg

Dash of All spice

1/4 Tsp of Cinnamon

6 cups of the snap crackle pop cereal ( Rice Krispie’s)

SO This was another treat I wanted to add to my fall party dessert lay out. I had most of the ingredients so its what I picked!

What you do is you melt the butter over the stove on low-medium. Add in the pumpkin as soon as its done, and throw in the spices. Add the entire bag of Mini Marshmallows and stir until those are melted. Take off heat. Then you have to wait 10 minutes to add in the extra cup of marshmallows. Once that cup is added WAIT longer. About half n hour. Then you can go ahead and add in the Kripies. They say that if you dont do this the treats will become soggy. So I didn’t mess around with it.

Pour into any size pan, depends on if you want tall treats or not I opted for the 9X13. Let it set for half n hour and then cut and serve! Simple! No bake! OHH YEAH

I didn’t try these because I am not a fan of rice krispie treats. weird I know. but I heard they were excellent!

Pumpkin Pie DIP

Im a sucker for dips. So here it goes:

Recipe for Pumpkin Pie Dip:

  • One box of Vanilla Pudding Mix
  • One tub of Cool Whip
  • Can of Puree pumpkin
  • Pumpkin Pie Spice

I bought the ingredients on monday for the party on friday, and decided to mix the ingredients early, that way it REALLY had a chance to soak up the flavors, you know dips are always better when you let the sit for a while.

The recipe called for pumpkin pie spice, but why waste the money for pumpkin pie spice, when you have a full spice cabinet? Heres how I made my pumpkin spice:

Pumpkin Pie Spice

  • Cinnamon
  • ginger
  • Nutmeg
  • All spice

I guessed on mine, and just added a little bit of everything, but if you’d like one to store in your cabinet heres the measurements:

  • 3 tablespoons ground cinnamon
  • 2 teaspoons ground ginger
  • 2 teaspoons nutmeg
  • 1 ½ teaspoons ground allspice
  • 1 ½ teaspoons ground cloves

So I mixed one box of vanilla pudding, and my home made pumpkin pie spice and added it to a tub of cool whip. I placed the cool whip back in the freezer for the week- to be used later when I needed it.

I grabbed a pumpkin and hallowed it out, (kept and cooked the seeds yummy paleo snack).

Thawed out the frozen previously made cool whip and added the can of pureed pumpkin. I threw it all in the hallowed out pumpkin and looked super cute!

This dip was super easy to make and I enjoyed it because it didn’t have cream cheese, or sour cream or too many ingredients like other dips call for. It was just a nice light pumpkin dip and everyone really enjoyed it!

Zucchini and Sweet Potato Fritatta

HAD to try. Simple and Easy Paleo Dinner. BTW I am on day 16!!

So I added in mushrooms to this mix, but just a little bit. I skipped the green peppers, and the parsley, who actually likes parsley??

This came out so TASTY. The sweet potato really helped it because without it you would be like.. where is the sugar? the milk? the cheese? Didn’t need any of it! so tasty! Great Paleo Dinner.
