End of my Whole30

Thirty days of Paleo, it was… rough.

I learned a lot about myself and my eating habits. I was miserable/cranky/irritable, and every other horrible personality trait you can think of. As you can read about here: Beginnings of Paleo.

By day 14 I lost count of what day I was on, eating Paleo became normal, and I no longer thought constantly about the foods I was “missing” out on.

I think my favorite part of the diet is not weighing yourself until the end, Helps not obsessing over weight and just feeling good. I have no goal weight because I just want to feel good in clothes, in life and feel most important HEALTHY. I decided step one is to not be ashamed of my weight and openly share it, and even to the world, via Senior2realworld. :) I felt the changes, I felt good. My jeans from last winter were so loose I could not wear them. Even some yoga pants were loose. At the end of the 30 days I am  unsure of how much weight I lost, because I didn’t weigh myself before. I can tell you: before I had my gallbladder surgery I was at 222. After my surgery and not eating for 14 days and at my lowest skinniest nastiest point of the recovery time I was at 198. I began to gain weight once I was eating again. (duh) and I got frustrated and stopped weighing myself after 212. This was well before Paleo. After Whole30, I weighed in at 206.5

The first introduction I had was Graham Central Station Ice cream. To reintroduce sugar and dairy. I felt good. no stomach ache, Could not believe it. I had cheated (oops) through out the diet, very little, a bite of cookie here, food not cooked in coconut oil and I felt as though, I would die. My body rejected the idea of any of this, so I was surprised when I felt fine. I would also get extreme sugar headaches, my body was NO SUGAR. OWW. I had to go for a modified barium swallow and they made me eat graham crackers and honey nectar and fruit cups and I felt so gross after that I could barely shake it for the rest of the day.

Unfortunately the next day was my Cookies and Cocktails Party. Where I indulged in cookies and alcohol. Except I really didn’t have that many cookies because they made my tummy weird, and I really didn’t drink much of the cocktails. I had SEVERE acid reflux issues. Luckily my Dr. before I got off Paleo prescribed reflux medicine because food was traveling down my esophagus slower than normal.  I especially noticed this with carbs such as bread, cookies anything like that. But it was painful, un sure if I had this problem before and ignored it because I felt crappy all the time or if it is actually worse now.

I also BURP ALL THE TIME off the diet now. I am currently on vacation and traveling through various family members and I dont want to be that person a “diet” and difficult when it comes to meals because they are already nice enough to let me stay with them and cook for me! I am still making healthy choices when I can. (yesterday at the airport I picked a grilled chicken salad) over subway, the many chinese foods and sushi and mexican I really WANTED.

Once I return home from Vacation Paleo will begin again. But my own version of Paleo so it can become more manageable for me and a lifestyle.  For example, I am going to eat beans, and maybe the occasional piece of chocolate and dessert if its special occasion. I want to learn more about what triggers my  acid reflux!

Steak Asparagus Wrap

So I saw a picture of this online and just tried to re create it myself. I went to Stop and Shop and looked for thinly cut meat, which was only like 2.63 for five pieces, which completely blew my mind, what a great cut of meat of a college budget, I also picked up a bundle of asparagus, not as cheap.

Used my skillet with coconut oil of course, and spiced the meat with random spices I found in my cupboard, I think Slap Ya Mama, and blackened spices.  I also added chopped onions for the aroma and taste. Meanwhile I coated the asparagus lightly with olive oil and salt and baked them in the oven on a tin foil covered cookie sheet for about 20 minutes.

When the steak was done I took three or four asparagus, and wrapped them with steak, holding them in place with tooth picks.

The steak was not as flexible as I was hoping, and it didn’t cover much of the asparagus. Next time I will look for a little bit different cut of meat, it tasted good, and it was fit my Paleo Diet, so I was happy. My mom liked it too.

I will call this one a half way Success.

Zucchini and Sweet Potato Fritatta

HAD to try. Simple and Easy Paleo Dinner. BTW I am on day 16!!

So I added in mushrooms to this mix, but just a little bit. I skipped the green peppers, and the parsley, who actually likes parsley??

This came out so TASTY. The sweet potato really helped it because without it you would be like.. where is the sugar? the milk? the cheese? Didn’t need any of it! so tasty! Great Paleo Dinner.

Lindsey’s Special Sauce

OMIGOD. so I just MADE UP spaghetti sauce. Paleo. I am so IMPRESSED with myself. Heres the deal:

I have always hated spaghetti and meatballs, I LOVE tomatoes (eat them like apples) and I love pizza sauce, but there is something about spaghetti sauce I never liked. Red sauce eww. Just dont enjoy it. Same way how I love pickles but hate relish.

So the other day I decided to try Spaghetti Squash. Because thats what I can eat on Paleo. So Spaghetti Squash is easy, cut in half, take out the seeds, and bake face down at 350 degrees for 45 minutes. Then I added Prego Sauce, (not Paleo friendly) and I HATED IT. you know why because it tasted JUST LIKE SPAGHETTI. for real. So I recommend spaghetti squash, because you REALLY can’t taste the difference. It’s what they say I know. But its true.

So time to try again but this time with my own sauce. This was also the first time I was cooking with coconut oil. I have been hesitant to cook with coconut oil because I thought it was taste coconutty, and I dont like coconut. WRONG. its such a high quality oil, and it DOES NOT taste like coconut!

So I threw in some sweet onion. (half) and two cloves of garlic, and a handful of sliced and diced mushrooms. I sautéed them for a while. Then grabbed a can of whole tomatoes, and put in the juice of the tomato and the tomatoes and diced them in the pan. Simmer Simmer Simmer.

Serve over spaghetti squash. MAN. SO GOOD. It DID NOT taste like Spaghetti Sauce. It kind of tasted like a gourmet pizza sauce, they kind you eat on a margarita pizza or something.

Here is my meal for the night: spinach and cauliflower “mashed potatoes” wasn’t a fan of those….



At LAST- Paleo TO GO Breakfast

And it’s easy to make. SAY WHAT.

This recipe makes me happy. and I eat it like three times a day.

Wake up in the morning, grab ya coffee mug, and mash a banana in it. I use a fork. Then crack an egg open and throw it in, and mix it all together. I leave a little bit of chunky banana. Then you put in the microwave for three minutes. It’s going to look like its going to over flow but in my experience it doesn’t, it rises by minute two, and goes down gradually through minute three.

Others have added blueberry, or unsweetened coconut. But I just east it plain!

It nice and hot and almost feels like your eating oatmeal, or hot banana bread if you added walnuts.

Paleo Taco Salad

So, I have been LIVING off Paleo Mexican Cuisine. Legit. Living off. Figured I’d share my recipes here.

Grab a thing of ground beef, or ground turkey I use sometimes. Whatever is Paleo Friendly. Grab a Skilliet and heat it up to medium heat, while it is warming chop half an onion a whole onion whatever you feel. I use sweet onion because when its cooked it ALMOST tastes like sugar. (so lame that I think onion tastes like sugar, whens this diet over?)

Cook up your beef and onion, until semi brown, Heres the fun part SPICES BAM. Make Emeril Proud. No measurements here:

  • Garlic Powder
  • Cumin
  • Chili Powder
  • Salt

So I really have no measurements, I LOVE GARLIC, so I use lots, and I think im gonna start using fresh garlic in this. A bit of cumin, tsp maybe and 2 tsps of chili powder, Just keep tasting it, love the food, enjoy the food, and salt to taste, Let this SIMMER that means low heat, ( I forget sometimes) for about ten minutes lets those flavors soak it in baby.

Next I grab lettuce, Make a bed, a bed of lettuce, I spring a dash of salt, and heres the secret. LIME JUICE, Since pretty any dressing is off the market in Paleo diet, Lime juice is great. I LOVE soggy salad, weird I know, so I sprinkle it on early. I dice tomatoes and olives and throw them over there too.

GUACAMOLE. Heres my famous(not really but I love it)  Gauc Recipe, so easy so tasty.

  • Avocado
  • Lime
  • Salt
  • FRESH Cilantro

Make sure avocado is ripe, if not, G-ROSS. Mash up that avocado, split your lime in half and squeeze that juice all over (use the other half for your bed of lettuce waiting for you) Chop a BUNCH of cilantro, like two tablespoons of it. Mix it in, and salt rock salt if possible to taste. Plop that over your salad with your beef once it’s done simmering, and you will be SO IMPRESSED with yourself. Home cooked meal. thats DELISH, AND PALEO CAVEMAN, CLEAN eating.

Paleo Deviled Eggs

Never was a big fan of deviled eggs, but its hard to find easy recipes to eat on the Paleo Diet, and I have been on a avocado kick lately, so these are great! Side note…Theyre GREEN :)


4 Eggs

One Avocado

 1 TSP. Lemon Juice 

Salt and Pepper to taste

2 Tsps Hot sauce Optional (cuz i hate hot sauce)


Boil the eggs, cut them in half, remove the yolks. Your basic deviled eggs procedure. 

Mash the avocado and egg yolks together, add in the lemon juice salt and pepper, and then hot sauce. I didn’t like the hot-sauce, just because I love the taste of egg and avocado that much. 

I wasn’t bringing these anywhere except from the plate to my face, so I didn’t care that I just plopped them onto the egg white, no fancy-ness here.

Paleo Lifestyle

Okay so I have been on a Paleo Diet for 9 days now. I am very mixed about it. For those who dont know its a caveman diet. No processed foods, sugar, dairy, or carbohydrates, the benefits are amazing, I am just waiting to feel them.

I didn’t have any real problems before I went on this diet, most people have headaches, body aches, other such things. I just really wanted to cut my sugar cravings because they were getting out of control, as you can see from my BLOG!

I REALLY struggled with diet for the first five days. Im talking crazy mood swings, cranky all the time and hungry. The beauty of this diet is you can eat as much as you want, which is awesome for me, theres not just not much to eat.

Once I figured out my menu more and grocery shopped/planned ahead, it started working out well. A difficult part of this diet is you have to make EVERY meal, you cant just grab cereal and milk or pop a bagel in the toaster. I was never a breakfast person but recently have been forcing myself to eat breakfast, so its hard for me to wake up early to make eggs or MAKE something. I cant just grab it and eat it on the way to work.

I was exhausted all the time, felt like how I did when I had mono, I think this was my body adjusting to making energy using protien (like its supposed to) rather than sugar or carbs.


No baked goods updates for a while, just be posting the boring Paleo Food. But some of it is quite tasty, this is longest I’ve gone without dessert in my life too. DESSERT IS MY LIFE. oy!!
